Almond Cheese - What the what?



"Almond Cheese" is not cheese at all. It doesn't even have the same consistency as a cheese spread. We vegetarians tend to like and make substitutes for the things we are giving up in our meatless, dairy less diets.

This is one of them. And while it may not resemble or be cheese like at all, it is still tasty!

This uses the left over almond pulp from almond milk (from this post). My recipe for almond milk yields about 1 cup of almond pulp.

Recipe:

1 cup almond pulp
1/4 cup olive or canola oil
1/8 cup lemon juice
1/4 tsp dill weed (or fresh dill chopped)
1/4 tsp salt
1/4 cup diced onion
1/4 cup diced red pepper

Put all ingredients in a bowl and mix together. Yields about 13 tbsp.

My current favourite "serving" suggestion is Rvita crisp bread, fresh baby spinach, almond cheese and topped with avocado. Mmmm! It is delicious!  Even my carnivorous father had to admit it was good (he still had to mention though, that in no way was this cheese or cheese like).
